Pistachio Butter Cookies

Hallooo everybody!

Wanted to post this for St. Patrick’s Day — but thought it will be a good idea to end the month of March with these cookies😊 There is always a rainbow at the end of your procastination…

You already how much I love “Sally’s Baking Addiction” recipes, so this is pretty much an experiment using the recipe. The original recipe is posted below.

Start with 1 cup of unsalted butter. Beat the butter until its smooth and creamy.
Add 3/4 cup of confectioners’ or powdered sugar, 1 teaspoon vanilla extract, and 1 teaspoon almond extract. Combine by using a electric hand mixer.
Once combined, add 2 and 1/4 cups of all-purpose flour, 3/4 cup chopped unsalted pistachios, and couple of drops of green and yellow food coloring. I used about 2 drops of green and maybe 1 drop of yellow food color. Use the electric hand mixer to combine. Try not to have the flour fly everywhere which ofcourse happened to me…
Once combined, the cookie dough should look something like this.
Put it in the fridge to chill. Sally suggested atleast 30 minutes. I did it for overnight. I took it off the next morning and left it at room temperature for about 45 minutes before doing the next step.
Preheat the oven to 350oF. Roll the cookie dough into balls as seen above. The sizes vary depending on your level of patience. Once the oven is preheated, bake the cookies for 15 minutes.
In the meantime, let’s prepare our brown butter icing. Heat/Brown 1/4 cup unsalted butter.
I am still unsure what shade of “brown” we should really be looking out for…I stopped here…
Once the browned butter is cooled, add 1 cup powdered sugar, 2 tablespoons milk, and 1/4 teaspoon vanilla extract.
Mix Mix Mix
Fresh out the oven after 15 minutes. Allow it to cool for 5 minutes or taste test a couple of them.
Once cooled, start dipping the cookies in the prepared brown butter icing.
And sprinkle some crushed pistachios…
Dip..Sprinkle…Dip…Sprinle…Repeat…

Easiest cookies I have made! Please do try this at home.

I made this for my dad couple of weeks ago. I used honey instead of sugar and cashews instead of pistachios and it came out perfect! I didn’t even add the brown butter icing and it was still approved by my father😃
